Not a white wedding...but a beautiful one!


Isn't this a beautiful dress? I am very pleased with how this turned out. Very unusual but extremely effective. This is very different to previous designs in more ways than one so there will be some good information to pass on in the workshop this will innevitably be. This is for a real bride this time...yes I know, no more cakes I said didn't I! But now and again there will be one that comes along that I will fit in if I can if the design is something that particularly appeals. I've a busy few weeks ahead with London next week and Canada shortly after. Also coming up is a very special little boy's birthday....my grandson Daniel will be 3 in August so already I am planning his special cake.

I love my job!


At the end of a working day, it's nice to feel that you have done a good job and made someone happy. Well in this photo, I think my own personal happiness is hard to hide. The Florida classes had a change of organiser mid stream which could have backfired and ended up with the classes being cancelled. Although I lost the interest of some of the students who had signed up originally, I gained some new ones and the appreciation of those who had already signed up and were waiting tentatively for the final outcome. Well clearly the outcome was good....the classes not only went ahead (all credit for that goes to Kyla Myers from Capital Confectioners!), they were filled with fun and laughter along the way and were a great personal success. The work produced by the students was superb! The enthusiasm and commitment was overwhelming. I will most definitely be returning next year with new subjects, but as always....a Bride and Groom! THANK YOU to all my Florida students.

Another Head and Hands for London


Due to the popularity of the Head and Hands workshops I have added one more for this year. It will be part of the London classes held in August....Head and Hands will take place on Thursday 12th August. Two more full day classes will follow. You can see all the details on the Extra Icing website. The July classes in London are full so hopefully some of the overspill for this subject will be picked up in the new August date. This class is also part of the list for New York and those classes can be booked directly from Extra Icing website also. Cheers!

Yo! Eric!


Teaching classes in Florida doesn't stop a person having time off to eat...right? Who better to share a dinner with than the amazing Eric Woller and his lovely wife Patty. I have been a huge fan of Eric's work since I first discovered his creations through Facebook...where else! Kyla Myers (my US organiser and friend for life!) and my husband and I met up with Eric and Patty for dinner and the man is as sweet as his creations. I feel so privileged to meet him. We had a blast. If you don't know who he is, take note...you sure will soon enough. Eric has already appeared on TLC's The Ultimate Cake Off assisting different cake artists create the most elaborate and mind boggling creations you've ever seen. Eric, along with his wife Patty run a successful cake business in Orlando called Me Me's Treat Boutique. Now the classes are over, I've one more day to relax and take in the sights before heading home. I reckon we'll be returning next year and that means more cake chat and dinners...right Eric? hahaha! Hello Orlando!

I've arrived safe and sound in Kissimmee, Florida and will be resting tonight before preparing for classes from Thursday to Sunday. The journey was excellent, probably the smoothest and quickest journey I've had so far to this side of the world. If you want to join me in any of the classes...except for the Head and Hands class as it is now full...then let me know. There are still a few places available on the other classes so there is still time. An evening stroll and I captured this beautiful sunset. Time for an early night now though...it might only be 9.30 pm here in Kissimmee but at home it is now 2.30 am! Oops!

I toad you so!


Fun with frogs! Haha! I'm planning an animal workshop for next year but haven't decided what to include so perhaps this little guy will be part of the gang. The little bees keep popping up on different designs of mine, they soooo have to be included too. What's happening this week? I'm starting the packing for Florida tomorrow and will be jetting off on Tuesday. Classes begin on Thursday so I'll just have time to take in the sights for a day before the work begins. As soon as the classes end I'm straight back home to make a wedding cake...one of two I've agreed to do this year so look forward to putting that together. I'll be in London at the end of the month and then in Canada in the middle of July. It's a busy, busy time for the next few months but in between times I will be working on a new tutorial. Subject will be kept a secret until nearer the time...since I don't know when that time will actually be yet! But I can tell you this, it won't be a Bride and Groom. This is the most popular question asked and I have to say that although I do have future plans for this subject it won't be a tutorial this year but I will keep you posted along the way. Don't forget the Seattle dates are open for registration and already the Bride and Groom class is filling up quickly so don't hesitate to book your spot before this class is no longer an option. I'M BACK!!!


Oh sugar peeps...I am sooooo sorry for the Extra Icing mail disaster this week caused by no Internet access while I was in Ireland. I had no reason to think that there would be a problem so off I went with my portable Dongles in hand (ouch!!). I travelled to Cork last Thursday which meant an hour's drive to the ferry in Troon, sailing for 2 hours to Larne and a further seven and a half hours drive to Cork. As soon as I arrived, the computer was switched on to deal with the day's mail. Oh no!! No Internet access at the hotel meant that my Dongles would be required. No worries...thought I. Think again! I couldn't get by the initial log in process for either of them and even getting to the log in was a complete nightmare. An hour later, I gave up and tried again the next morning. Nothing I did was working and with little to no access at times with my iPhone it was time to panic. I managed to make the post on my blog to try and explain the delay and my daughter posted on Facebook my dilema...although I know not all of you follow me on Facebook, it was a last resort! I can't make changes to my website with my phone so I had to try and put it out of my head and deal with the consequences when I came home. Despite this, I had the most amazing 2 day Bride and Groom workshop in Cork followed by a demonstration on Monday evening. More on that later with photos too. I arrived home tonight...well last night now (it's almost 2 am!!!) and immediately started on the clean up! Oh dear. I can only apologise again for the mishap and will make sure that I check out the Internet access before I set off on my workshop travels and leave you hanging around awaiting my return. I'll be off to Florida next Tuesday for workshops there, and yes....I WILL have Internet access while I am away! Cheers folks!
