Classes coming up in February begin in Belfast on the 9th, 10th & 11th and ending in Nottingham on 25th & 26th. The Belfast classes are over 3 days, the Bride and Groom class followed by the one day figure modelling class. There are just a few places available in Nottingham but there are plenty available for Belfast, so come along and have some fun. All materials are supplied. All you need to bring is some lunch....tea and coffee along with biccies and bites will be there for you. London classes are coming up in March and are already booking. Spaces on the London classes are limited so don't hang around if you'd like to take part. Can't wait to kick off classes in the UK this year. I've just returned from Nigeria where I had an amazing time and look forward to returning in April. Come and join me folks...you won't be disappointed!

It's a brand new year...and we always start it off resolving to be better people and take better care of ourselves. All the smokers resolve to quit and the diet clubs make an initial fortune as half the population signs up, resolving to shift the pounds once and for all. Then next week comes and the air is twice as polluted with smoke and even more doughnuts have shifted off the bakers shelves! Lol! Why do we do it? Make resolutions I mean? I resolved this year to stop smoking and not to drink so much tea. This is the easiest resolution I've ever made and the ONLY one I'm ever likely to be able to keep since I neither smoke nor drink tea, I cheated! Well...where is it written that a resolution has to be something that you already do? One resolution I DO know that I will be able to keep wholeheartedly....I resolve to give you the most entertaining workshops this year. Kicking off in Nigeria next week and then Nottingham and Belfast in February. Seattle classes in March are now open for registration too. Dare I tell you...this is for my SIX year old grandson! (He wanted it!!) What happened to Thomas the Tank Engine and Postman Pat?? Little boys have very different ideas of their ideal birthday cake these days...but whatever Andrew wants from me he's going to get. I hope he doesn't have nightmares with this. The head is made from Krispie Treats and padded in some areas with sugarpaste which allowed me to create the teeth in particular and the nose and cheeks. I had no idea what was going to come out of this once I started, but it's amazing how carried away with the gore you can get! Lol! This is far removed from my norm, but we all have to step out of our comfort zones once in a while to be able to discover other things about us. I had fun with this, I surely did, but I'm not looking to repeat it any time soon!

Nigeria...a personal view

If you were asked to name some of the most amazing places you've ever been on holiday...would you rate Nigeria high on your list? In fact, would you even consider Nigeria as a holiday option? Probably not. If we are to believe all that we read and all that we are told then that would be understandable. This account is merely a personal experience and I am not the voice of authority...even though I sometimes like to think I am, I am in the minority on that one! Lol! I got the opportunity to demonstrate my skills for Kogsy Sugarcraft Centre in Ikeja. I told very few about it until the advertisement was public, then I told anyone who asked where I was off to next on my travels. The response wasn't so wonderful, and if I had listened to all the warnings and opinions then I may never have gone. But anyone who REALLY knows me will realise that saying "don't" to me is futile. I can only judge things for myself and I would impress upon anyone to do exactly that, otherwise you may miss out on some of the few things in life that can actually impact it. I appreciate the position I am in for sure...knowing so many people, I was able to arrange my own security for this adventure but I travelled alone to and from the country without issue. Meeting up with my groupies at the airport (thanks lads!) I was immediately treated like a Queen and whisked off to my hotel. After a good night's rest, the next day I was off to do my thing at Kogsy. During the day time is when I first saw the streets....the security....police....beggars and sellers walking in between fast cars with a care less attitude. Through secured gates I go and into the Centre where I am greeted by a mass of eager to learn faces and some of my Facebook mafia! Lol! I take a break and am taken outside to walk around and finally see a little of how life is. Some things shock me...others sadden, but the main thing here is to open your mind and look beyond the things that first catch your eye. Once you realise how everything works, you will soon know that it is only you who has a different view...because you aren't part of this culture. What you witness is the every day life of the Nigerian people and it's every man for himself. You can either ignore it...run from it...or perhaps open your mind and get to know and then maybe you will begin to understand it. When I wasn't taking part in anything related to work, I was treated to the most relaxing experience of my life. Sun every single day...Guiness stout (for medicinal purposes of course...it helps keep malaria away, drink enough of it and you will be biting mosquitos and not the other way around!), beach parties and MUSIC! Nigerian people can move with the beat...and the beat is everywhere you go. I was very lucky to be looked after and never had a moment where I was completely alone. I experienced a very different way of life. Eating traditional foods, never decide you hate something judging it purely on sight. If you can close your eyes and trust all your other senses then you may be very pleasantly surprised. I've eaten with a fork and knife, chopsticks and now I can add to that...my fingers. If the culture requires me to eat off a shovel then I'd try that too. When in Rome do as the Romans do! Lol!

A massive thank you to Kogsy Sugarcraft Centre for hosting me and for giving me such a warm welcome, for introducing me to so many people and allowing me to come into their lives. Also, a huge thank you to my personal security guards...aka The Circle. If you've seen Meet the Parents movie you will know what I mean by that...the circle of trust. If not, then watch the movie, purely for the laughs if nothing else. I was surrounded by my own little circle of trust. Thank you guys, know that I will be calling for your assistance again because I know for sure that I will be returning in April 2012. No disrespect to anyone else's experience at all...but for me, I loved Ikeja and all it had to offer. You can keep your package holidays for me, centred around the most commercialised parts of every country. I want to be taken to the heart of everywhere, where reality bites...life is never the same again afterwards. It makes you appreciate more what you have and it would do some people good to be taken there and left with their eyelids stapled open to make sure they miss nothing and perhaps might just come home and never complain about the trivialities in their lives ever again.

How proud am I....I just can't tell you. Nigeria, here I come. I have been given some mixed opinions about my upcoming appearance at Kogsy, mostly built around hearsay. I take each decision I make very seriously and for all the right reasons. I have many Nigerian followers who constantly ask when I might visit their country to share my knowledge in some way and I have been visited in London by many who have travelled especially for class. So it is time that I return the favour...simple as! You can watch this space for my own personal review of my experience. I will be giving a demonstration at Kogsy on the 30th November and for the rest of my time there I will be enjoying the hospitality, music and FOOD! Bring it on.....

A little bit crazy you might say....but all in all, a FABULOUS weekend at Cake International, NEC 2011! A HUGE thank you to Luci Crossman of Juci Luci's Cupcake Factory for being my more than helpful assistant all weekend and for making sure I had everything I needed to keep me going...which means everything I totally forgot! Lol! Also a HUGE thank you to Tracy Scope for stepping in when needed and keeping the smile on my face...the only way is Essex babe! You're a star. So....if both of you girls are willing and available next year I'll see you at the same place and on the 9th, 10th & 11th November. Just keep me going in coffee and I'll be sound as a pound! I didn't get much opportunity to view the beautiful cake entries but I managed to spot a few from my past students who walked away with Gold certificates. Well done to all of you. Three days of stress, hard work, sleepless nights, bloody sweat and tears.....will I do it again? You bet I will!

So what's the Twin Towers in Malaysia got to do with the classes coming up in London next year?? Nothing! That's what...but isn't it a gorgeous picture?? Lol! Actually...I've just recently come back from Malaysia and haven't had a chance to sit down properly and tell you how absolutely fabulous the country is and also how amazing the classes were. The students were a pure delight, full of fun and up for a laugh...well, they had no choice really. Pretty full on it was, with judging the beautiful work submitted in the second annual Cake Show with ICCA hosted by Rosalind Chan. ANYHOO....back to the classes in London. I will be teaching the Bride and Groom once again at the Colne Room, Wraysbury Church Halls in....Wraysbury! The place is situated about 10 minutes drive from Windsor, where I will probably opt to stay for the duration of the classes as the shops and eateries there are just too much to ignore! Wraysbury is also on the direct train line from London. (Waterloo I think!) The Village Halls are a short walk from the station...less than 5 minutes. A cheeky wee title for this new class which will be coming up soon. Have no clue where yet...but it will be soon! Lol! The clothes for this one were heavily inspired by Next Online Shopping for kids. I never really thought of using it for inspiration before, but it's a great idea. The kids are better kitted out than the adults these day...fabulous knitwears...but that's another blog! Anyhoo...I think I've made this wee lassie look like one of the Tweenies! It wasn't my intention, poor thing, but it's a simpler style of modelling to satisfy those who want a less intensive course but who also want to achieve great standards. On that note...I have to tell you that I am bidding you a fond farewell for some days as I am off to Malaysia this afternoon and will be teaching at the International Centre of Cake Artistry. Are we done already??

That's it over for another year...well another two I reckon. Florida had a double whammy last week when I arrived shortly before a hurricane which thankfully missed Kissimmee where the classes were held but we had our share of thunder storms, that's for sure. It didn't spoil the momentum of the class and even though the lights decided to go out on us one day we carried on like good little soldiers. I've had a blast in Florida...ate my share of the ocean while I was there and had a little retail therapy. I half expect to find my face on America's most wanted one of these days. They let me away with so much when I am let loose in the shops to sample the goodies on display...I didn't buy anything this time though. All these beads and goodies stayed put...I don't think the UK is ready for this look just yet! Anyhoo...homeward bound am I (I'm writing this in Newark Airport!) and back to a weekend cupcake class which is going to be a whole new thing for Extra Icing and a lot of fun. Beginner's class near the end of the month followed by classes in Malaysia to end September and take us into October. Then it will be the "C" word.....the one where Santa is involved....not the other one, don't get me into trouble!

Yes....I am coming to Sydney Australia in September 2012 to teach at the amazing Planet Cakes! Subjects will be decided soon and class dates will be made official and posted on Extra Icing website Calendar of Events. I have a busy month ahead, leaving for Florida tomorrow and Malaysia at the end of next month so bear with me for October when I will be working on some new designs and hopefully have the projects on show as quickly as possible. Still a while away until the classes....a whole year in fact, but response already has been overwhelming so it's never too soon to shout about I reckon! It was Daniel's 4th birthday last weekend. It doesn't seem like all that time has passed since this little ball of fun arrived on the planet....but it surely has. He continues to make progress in all that he does and has the cheekiest smile and the most contageous giggle. What more do you need to get all your own way...right? I loved making the Elmo cake for Daniel, it was a lot of fun. I used Krispie Treats to make Elmo and although it was a messy business....I'll do it again. Wonder how I will top this one next year! Hmmm...better start thinking about that now I reckon!

After posting the results from the students of my class held at Extra Icing Studio this weekend, there has been quite a fluttering of interest to have another one soon. I am teaching this class in London this week but have very few dates available to fit in anything more this year....BUT....I have done what I can to juggle things around and will be offering this class twice more at Extra Icing in August. New York skyline inspiration

More painting fun on a cupcake...NY skyline for inspiration and a few brush strokes. I love how these turn out but don't know that I'd care to devote so much time to one little cake if I had to do a whole load of them for a function. I wonder what kind of function would want something like this? Most people go for the Italian Meringue buttercream and frangipani floral accent....simple and tasty, tasty, tasty! However, I enjoy this kind of thing much better than opting for a swirl of scrummy frosting, but it's something to be admired more than eaten...so perhaps I should make more of them at home so that I don't eat so many myself! Lol! Still might consider a little class for this type of thing though...it's fun for sure, so maybe it's time to pass some of that on.

Don't forget Florida workshops in August folks...a swift change of subject for sure, but the classes are so near now I can't help but mention them!

I have had a month of...shall we say...recuperation. But as the end of that month draws near, I have been ever so slightly BORED! So boredom brings ideas...and today, I put an idea into action and played around with some cupcake. I am not defined by cupcakes but you know, that may change. I will always teach modelling with sugar...painting freehand is something you have a knack for or not, and not something I could show others how to do. But this won't stop me doing things for fun and sharing the results. I will play around some more when time allows, but in the next week I will be back to work completely. I have a workshop at Extra Icing Studio in Scotland to kick off July followed by a Bride and Groom workshop in London. I'm back in New Jersey in June 2012. The Meadowlands Plaza Hotel is once again the place to be for 3 days...well, 3 and a half days as the Head and Hands mini class is part of the collection. I know it's a year away but I thought I would give you loads of time to plan....and it has worked, as some of you have already booked up! So thank you for that, and I look forward to seeing you. YES! It's finally time to register for the Florida classes. You will find all the details here at the Big Cake Calendar. I am teaching the Head and Hands workshop twice in one day to give you the opportunity of either a morning or afternoon class. That means more spaces available which can only be good since this mini class is always the first to fill.

ALSO....today the New Jersey classes are online and open for registration. These classes will take place in June 2012 so there is plenty of time to think about those ones. I have added a new Calendar of Events on my website which should make it easier for you to track me. Just type where you are in the country, ie. Florida, London....in the search box on the Calendar page and if I am teaching in that area then the classes will come up and you can see the dates and links that you need. I hope that makes things a little easier and that it all makes sense.

I have a 3 Day Beginner's workshop scheduled for September at my Studio in West Calder. There are only 4 places available on this little course...well, 3 now as one has already been taken. As well as going through the uses of different types of paste, you will be shown how to use various cutters to create a pretty side design. The picture is only a guide to the kind of design you will be creating as we will be using a variety of different ideas so that you can personalise your own creation. The ever popular head and hands is part of this course, ending the week with a beautiful little baby face to adorn your cake! You will make a cute little elephant/teddy bear....whatever time allows we will cover and do. So as well as taking home your covered and decorated little dummy cake...you will have a little box of sugar characters to accompany that. A small and personal, fun filled class. Well I finally finished at least one new project for classes coming up later in the year. I'll let you know where I will be teaching this one very soon...I am hoping Florida, but I will confirm this later. I CAN however confirm that I will be teaching in Malaysia in October at the International Centre of Cake Artistry. My classes will take place from the 6th until the 8th....I will also be giving a demonstration at the Cake Show previous to these dates but when more information is available to me I will post it for you. I am so thrilled to finally have this opportunity. To everyone who has been added to the list of interest for my classes in Malaysia I will send you an e-mail personally with details of registration. I look forward to seeing you all at the end of September and early October! Wooohooooo!

The finished Bride and Groom along with it's creator...me! Lol! I don't often remember to photograph my own work after I teach but this one was snapped by a student, and soon after, I was busy signing all of their work for them to take home and admire. It has been an amazing few days in California already. The students are buzzing and the weather is pretty much okay...compared to the cold and wet I left behind in Scotland, I can't complain. A day off today took me on an adventure to.....the Shopping Mall! Well...where else do you go to relax and unwind, I ask you? Tomorrow is the start of another two days of classes and then I will be home again. But not for long....I am in London next week teaching the Asian Bride and Groom. I look forward to that immensely.

I have a little more news that may please my Malaysian followers. I had talked about being in Malaysia in July this year but can now confirm for certain that I will be teaching in October instead. The dates, venue and class subjects will be posted as soon as I have that information available to you. The organisers are busy with advertising on their own site and will send the details to me as soon as they are ready. For those who have already sent me an e-mail expressing an interest in my workshops in Malaysia, I will e-mail you personally with details.

Golden Wedding couple...a sugar dedication!

This is a 10" fruit cake...a lethal weapon disguised in marzipan and sugarpaste if you ask me. This thing weighs a ton! Anyhoo...I was asked if I would make this cake for a lovely couple and as the good lady doing the asking paid up front in full (unlike some other birthday cake requestee...but let's not bring that up again....GOLFER!) *cough!* Okay...system now cleared. As I said....I was only too happy to create this lovely couple in sugar as I don't often make creations of the older generation, so I have to ask myself, why not? I think I will take note of this and dedicate a workshop to the older generation (denying that I am reaching that category myself of course) and come up with something that would be a good learning experience. (Added to my list of "to do's")

I am still in London at the moment...just finished another weekend of Bride and Groom class and will be heading home tomorrow....then flying off to California where the classes in Seal Beach await me. I hope the sun is waiting for me too. Apparently it is snowing again in Scotland (tries to act surprised!) so I don't look forward to the thermals being raked out of the underwear drawer again. A good night's sleep will be in order before the long drive home....ah'll tak the high road and you'll tak the low road and ah'll be in Scotland afore ye!

Well...here I am with mini me...Muppet Lorraine! hahaha! Finally I can talk to myself without being carted off to the mad hoose! This is Muppet Lorraine created by the amazingly talented Lauren Kitchens who has appeared several times on Food Network Challenge. It could be argued that making a muppet out of me may not be her biggest challenge of course since I was half way there already. I have had a fabulous time in Austin and being part of That Takes the Cake Show. I will post more on that later...at the moment I am waiting in Newark Airport to board my flight to Edinburgh. That Takes the Cake - Austin

Here it is...my attire for That Takes the Cake Show here in Austin this weekend (26th & 27th February). Look closely at the Celebrity Class list and you'll see yours truly printed on there. Yippee! A tee shirt with my name on! I've finally made it..hahaha! I've been so lucky today to be able to get an insight first hand to see all that goes on behind the scenes and I don't think anyone could imagine the work that goes on to put a show like this together, mostly by volunteers I may add. I got a sneaky peek at Mike McCarey's class as the students were busy applying buttercream to their models...which all stood as tall as me by the looks of them. The man is a genius and I am a huge admirer...but wait...who else was sitting on the sidelines helping him out today? None other than Lauren Kitchens!! "Beam me up Scottie...am hallucinatin' here!!" I am a HUGER admirer of Lauren, however, she knows me better as... in her opinion... I am "the funniest Facebook poster!" Oh well, it's best to be known for one thing than nothing at all. Haha! Tomorrow is the start of the show and it is going to be jam packed. On Sunday I will be teaching my Head and Hands class and will follow on with another couple of classes on the following days. Then I head home and hit London on the 8th...jet lagged and smiling like a cheshire cat no doubt. Can I just tell you that the Seal Beach, California classes are now filling up nicely but there are places still available if you are interested? We have a fabulous location and venue so please come and join me...it is fun, fun, fun and very informative. You'll have a blast..I promise!

"PLEASE can you help...I need a cake desperately...I know it's short notice but..."

So...if it was THAT desperate, why oh WHY didn't you bother to show up and collect it then?? I had originally posted this cake feeling pretty good about the fact that I took this order through e-mail in good faith...at the very last minute. Not something that I usually do and since not taking regular cake orders I thought I was being good hearted in doing this favour. Mostly stupid on my part for not asking for a deposit beforehand...but with only a couple of days til collection, I decided that cash on the day would be fine. This agreed with the very grateful customer, I carried on and completed the order in good time. In return for the favour, the customer has decided to leave me with this cake without so much as an explanation or a courtesy call. This isn't the first time this has happened, but it will surely be the last. To anyone out there who thinks that this is "just a cake"....think again. This is my electricity, my shopping trip to the supermarket for ingredients, my time and patience in covering this cake with great precision and care, my time in mixing and colouring the paste for your requirements, my time in cutting out letters...which is painstakingly tedious...and aligning them accurately just for you, my time and my effort in hand modelling all the little details.....my precious time. We cake decorators are sick and tired of hearing "it's just a cake". If a cake is all you want then go to the supermarket and buy one off the shelf...no hassle...job done. The amount of time put into hand made cakes and the money paid for such an art is often less than the minimum wage once you calculate all the time spent making it just for you...to your specification and requirements. Would YOU work for minimum wage? Would you spend a day at your office or factory and accept that you wouldn't be getting paid at the end of it? I'm sure the answer is no...so why do you think it is okay to place an order and use MY time and not pay me for it at the end of the day? For future reference...I may still decide to take a late order as a favour, but only if payment is made IN FULL on the day of the request and not otherwise. If this is not acceptable then I apologise...you know where the supermarket is. To ALL you cake decorators who read this...I write this in appreciation for you. To the person who didn't bother to collect or call with any explanation...I hope you feel embarrassed.

Copyright issues explained...again!

This subject is so worn out...but it's time to rectify something once again and put the record straight.

The Online Tutorials I sell for figure modelling are Copyright to me and each one has a Copyright Statement which reads as follows:

"Please note that Extra Icing's series of Online Tutorials are copyright of Extra Icing author, Lorraine McKay. The Tutorials may not be used for teaching purposes by anyone other than the Author. Any content printed or downloaded may not be sold, copied or reproduced in whole or in part in any manner or in or on any media to any person without prior written consent of Lorraine McKay"

This said...I teach my techniques and skills to anyone who wants to pay me to learn, I do ask in classes that step by step photographs are not shown on any forums, websites or blogs. Following a class I am more than happy for everyone to go off and recreate their own models using the methods taught and selling their cakes to clients and making as much money as possible. I don't need to be credited for every cake that goes out of another baker's door. If you choose to copy and recreate a design belonging to ANY one, then in this case the original artist should be credited.

As far as teaching goes...it is NOT okay to attend my classes and then offer classes teaching the same methods, in particular the facial features of my figures which have become my own signature and are recognisable everywhere...which is WHY when anyone other than myself takes the class there is always someone...or several people who will contact me to let me know.

I find it very disappointing that anyone would attend a class to find the "secrets" of that particular person's work to then take it forward and offer workshops and try to gain financially in that manner. You have no right.

Anyone who publishes a book has it Copyrighted too. If the techniques of creating my figures, in part or in whole, appeared in any publication then I would take steps to have the publishings removed.

To clarify...I do not expect my students to leave a class and never to create the figures I teach ever again. This would be pretty ludicrous. I do not, however, give permission to anyone who attends my classes to then go forward and teach the same methods themselves...in part or in whole. This infringes my Copyright the same as copying and recreating the tutorial projects and advertising them on your own sites as "designed and created by...YOU". Created by...yes...Designed by...no.

I hope this message reaches any forum where anything I have said has been taken out of context completely. This is actually what I say to anyone...it's called protecting MY rights.

Thank you always to the followers of myself and Extra Icing who keep me posted on any wrong doings. I appreciate it always. Thank you.

Beautiful classroom...beautiful people! I had a wonderful time in Maastricht, Holland teaching classes hosted by Ti-Ta-ToverTaartjes...try saying that after a few drams! hahaha! Anyhoo...I was blown away when I walked into this pink and fluffy world of sugarcraft. I don't know what I expected before I got there but my mouth fell to the ground as soon as I walked in the door. So pretty. A store to buy all your sugarcraft goods, dotted with a flavour of the lovely Dolores's personality and great taste. Candy Floss with knobs on...that's what it is! LOVED it....and loved the classes too. I met more fabulous and eager to learn students. Many who belong to the Facebook mafia...is there ANY one NOT on Facebook these days?? I'm not a great Tweeter...more of a Twit than a Tweet...so Facebook is where you will find me most...when I'm not working that is. (and I said that with a straight face too!) A MASSIVE THANK YOU to Jacqueline Ash and Dolores for all the organisation of the classes and for looking after the students so well. Thank you for treating me like a QUEEN! Well....it caught up with me finally. There's no hiding from it really is there, so bring it on! I can kick and scream all the while but it won't change anything. I just need to replace some make up brushes with trowels instead and everything will be fine and dandy! The snow is falling heavily which means that my day has already been dictated....I ain't going nowhere fast! I will spend it pampering myself and cooking something lovely to enjoy whilst sitting in front of a soppy movie followed by something light hearted to make sure I don't go to bed with tears streaming down my much older face!! hahaha! The cake I am holding was made for me by my beautiful daughter, Vicky. I was not allowed to take part in any of it so this picture was taken when I was seeing the cake for the first time. Vicky is a nurse and by no means very artistic so for her to do this for me was absolutely amazing. It was a chocolate cake too which made it all the more amazing! I had a lovely weekend with my family and today...my actual birthday....I will enjoy switching off and chilling out! Thank you to so many people who have inundated my Facebook with kind messages. I am overwhelmed by your love and support and I cannot say enough words to express my gratitude....but I do thank you and appreciate you all.

"Head and Hands" on 10th March and "Bride & Groom" on 11th & 12th March now only have 1 place available. Only 3 places on the "Asian Bride & Groom" coming up a month later in April. There are plenty of classes to choose from in 2011 with many spaces still available. Take note of the February class for Head and Hands which is being offered in the morning AND in the afternoon. I leave New Jersey tomorrow but I have to tell you I've had the best time here. As you can see....I did make it to Carlo's Bake Shop but I didn't actually go into the front store. I was whisked into the bakery itself by the lovely Dianna Lopez who works there on Saturdays. I didn't meet Buddy...I guess he's a bit busy these days...but I met Frankie. That'll do for me! In any case, I'll be sharing a stage with the fabulous Buddy Valastro in Perth, Australia in May 2011. Yes...you read that right! Debbie Brown and I will be on the same stage as the man himself as part of the massive event hosted by Cupid's Delight. Click on "01" to see the event advertised on Cupid's website. We will be taking part in a mini Cake Off with other celebrities and will also be demonstrating our skills to the crowd. We are also offering classes before it all comes to an end....I'm sure there is going to be some good time in between for us to be able to take in the beauty of Perth and perhaps visit a shop or two...or three! hahaha! So if you don't already have your ticket for this amazing event...don't waste any time! They are being snapped up right now so don't be disappointed. Australia aside....I've had a blast in New Jersey and met some fabulous people as I always do when I travel. Thank you to all of my students who put up with me for 4 days. NJ classes off to a good start!

Head and Hands in NJ...always a good start for a run of classes. We had a lot of laughs today and the students are just so great....even helping me out with stuff that I didn't have! Oops! Too long a story to get into that one but let's just say that everything is now under control and I am going to pick up the things I should have had just shortly so I'll be all set for the next few days. Nothing drastic...just a little thing like ordering gumpaste instead of regular fondant....no biggy! Aaaaaaargh! Anyhoo....all's well that ends well. I'm off to visit Carlo's Bakery in a little while. Finally I get to see the home of the amazing Buddy Valastro creations. Woohooo! An early night tonight means a good rest for the Bride and Groom class to begin tomorrow. Can't wait....photos will follow. Cheers all!

NEC Cake Show...over for another year!

Yes...it's us again....the Fran and Anna of the sugar world! Lol! Debbie had as usual the most gorgeous stand at the NEC Cake Show in Birmingham and was also...as usual...smothered in admirers all day and every day. I managed to blag my way in to her demonstration but I had to work to earn the place. So there I was, perched behind her on a chair, kneading her paste and handing her the colours she required. Oh...and I was also the microphone "switch on, switch off" person! haha! It was weird not being part of the show this year but unfortunately some personal circumstances meant that I had to take a step back...but hey, only for this year. Next year I will be back at the NEC in my rightful place....on my stand! So to everyone who saw me over the 3 days and who spoke to me and posed for photos....thank you for spending the time. Thank you also for being so kind and lovely. I really appreciate it. See you next year folks!

The workshops are just around the corner and today all of you who are attending received an e-mail from me to remind you of all that you need and to say that I look forward to seeing you. Can you believe these classes have come around already? I certainly can't....but I sure am glad! There are a couple of spaces left in the Bride and Groom class and two or three in the Girl's Best Friend class so if you still hope to come along you can book directly from Extra Icing. Hello Cake Central!!

FINALLY!! I met up with Jackie and Heath from Cake Central on my trip to Seattle. I have been part of Cake Central since 2006. I stumbled across the site when I was searching for some kind of cake pan or something....boy oh boy! It only took a few hours of viewing before I was hooked. The site has everything a cake decorator could wish for and all in one place too. Jackie and Heath were there in the beginning when my Online Tutorials took off, even advertising them on the site for me for a while. Over the years I have become a well respected member of the site and have met so many members in my classes already. It's been a pretty amazing ride is all I can say. When they found out I was going to be in Seattle it was the perfect opportunity to meet up....I didn't even know this is where they were based! Hahaha! Last night we all met for dinner and had such a great time. It was pretty surreal to be speaking face to face with this lovely duo....and not forgetting Leanne too. Somehow I doubt this will be our last meeting, I sincerely hope not. This has been one heck of a trip this year.....I won't forget it in a hurry! Cheers my Cake Central buddies....I've had a blast!

Bride and Groom class gets underway

Today we did the Bride and Groom....or at least the Bride and half a Groom. The Seattle venue (Warwick Hotel) is just fabulous, providing us too with an excellent lunch. By the end of the day my ladies were well ready to go have a lie down! Haha! Despite the intensity of the first day they are all eager to return tomorrow to finish off their pieces. First day is always pretty concentrated but what use would a class be without a little challenge involved. I'm lovin' it!

After recovering from the flight the previous day, I spent the day shopping for supplies for class and visited Dawn's Cake and Candy store. There I was greeted by these two characters but alas, the costumes were of the empty sort! Hahaha! If they hadn't been I probably would have run a mile. Anyhoo....a little wander around this fabulous store and a visit to Michael's later (well...you can't not visit Michael's when you're in the US) we then ventured to Mike McCarey's place of work to meet the super genius himself and have a wee chat. Having now seen up close the work of this man, it has to be said....Mike IS amazing...his business is aptly named Mike's Amazing Cakes! Today is the first class in Seattle...the ever popular Head and Hands workshop, followed by the even more popular Bride and Groom over the next two days. That means....there is a day off in the middle! A little sight seeing perhaps and maybe, just maybe.....a few Starbucks along the way! Yeeees!

I am currently working on the Asian Bride and Groom workshop project which I will be teaching in London next April. I have all of next year's dates organised and this is the only subject that I haven't completed to be able to advertise the classes coming up...so I need to get a wriggle on! I don't normally show a work in progress but I was pretty happy with my lady today that I decided to put her on show a little earlier than planned. Her groom will be complete tomorrow so you'll see the full project in the evening....so what's 24 hours between friends! Haha! The requests for this class are quite something so I am presuming it is going to be a popular and fast selling class. I may teach it twice throughout the year depending on how it is received in the first weeks of advertising. I'll keep you posted. All of the London classes will be online to book on Extra Icing website very soon. The Bride and Groom class for March is of course online now and is already doing very well and has just about reached the halfway mark. Not bad, eh!

Happy Birthday my little princess!

Happy first Birthday to my little princess, Tegan. Granny made the cake of course...more pink and white! Oops! The border was done using the FMM embosser and cutter set and the blossoms were done using the PME plungers. Love those things! The butterfly is cut using the Patchwork cutter and dusted with pink and snowflake lustre. Hand made bear of course...but thank goodness for cutters when you're short on time! I like the white and pink bear, very girly indeed.

I attended an amazing wedding at the weekend in London and stayed in beautiful Windsor. I made sure I had some relaxation before heading home to the preparations for upcoming classes. Starting with the Seattle classes this month, there are a few places still available so if you'd like to come along, go to The Big Cake Calendar and book your spot! The next US classes will be in New Jersey and at this time, the "Head and Hands" class is full and there are only a few places available in the "Bride and Groom" class. Sooooo...if you'd like to attend this class or any other then go to Extra Icing website and book your spot...or spots! I am busy working on the list for London 2011 and will be posting the remaining classes very soon. The first "Bride and Groom" class is in March and is already booking so I am thrilled to bits. More Online Tutorials are in the pipeline but I am struggling with time at the moment to work on them. The annual Cake Show at the NEC, Birmingham is on the way this November and is a 3 day event this year. I will be demonstrating at my own stand this year...C19. So if you plan to be there, do come and say hello. I'll be there with a huge smile on my face...but think I'll leave the tiara at home! Cheers!

London workshops for 2011 begin!

I am now working on the list of classes to be taught in London in 2011. Beginning in March, we will kick off with the ever popular Head and Hands workshop which will be followed by a two day Bride and Groom workshop. The design chosen for the first class is this modern bride in a beautiful gown, the detail on the dress is a new technique which I haven't shown in my classes before. The groom in this picture has no hair and is also wearing the Grey Spirit Kilt...just in case you didn't notice him in the background! Haha! However, in class the groom will certainly be given a head of hair and he will also be wearing some trousers. I don't think the Kilt is so popular in England so decided that trousers were the better option. To book a place in this class, go to Extra Icing website.

I've just returned from teaching my last London classes for 2010...but have no fear, I'll be back early 2011 with a string of new dates and new projects. After having a HUGE coffee and getting my feet up for a little while, I decided I'd best catch up with the mail. This picture was sent to me by Marie Taylor, one of the students from my Florida classes. I think Marie was trying to take a picture of her beautiful Bride and Groom but perhaps got more than she bargained for. Thank you for sending it to me Marie...it made me smile thinking back to the classes and I look forward to a return in 2011. Happy 3rd Birthday my precious boy!

My little man is 3 today! Daniel was looking a bit shell shocked with all that was going on around him...balloons, decorations, PRESENTS! Yippeeee! It just seems like yesterday when he was born. How time flies when you're having fun....and Daniel has given us plenty of that. Although his vocabulary stretches to "bye!" and "whassat?" and his little legs aren't taking him anywhere just yet (although he can get across the room quicker than a commando).....this little man has progressed so much and continues to amaze everyone with his determination. He will be making new friends as he is going to mainstream nursery after the school holidays but will still have 2 days in the week where he will attend his Special Needs nursery, keeping up with all the friends he has made this year. There are still a few holidays left so I will be making sure that he gets plenty of "granny" time before he goes off to be a big boy!

Daniel loves Timmy Time....so how could I refuse him! Happy, happy birthday darling Daniel. Granny loves you to the moon and back again! xx
